Compliance with storage rules only slows down microbiological, physicochemical processes. Vacuuming, heat treatment, and cold best stop oxidation processes, that is, cottage cheese from the store is always stored longer than country or farm cottage cheese.

The expiration dates and storage conditions for most products have long been determined, prescribed by regulations (in Sanitary Regulations, GOSTs, and other documents) and indicated on the packaging. With store-bought, everything is simple - if the expiration date of the cottage cheese has expired, it must be disposed of. But with your home you need to be more careful.

The deadline is influenced by several criteria:

Homemade cottage cheese spoils most quickly if it is left open, on a plate, at room conditions. The longest time is in a vacuum container. Foil has proven itself well - cottage cheese placed in temporary envelopes made of food foil is stored for up to 4 days without changing its taste.

Although food products are stored for a long time with the help of preservatives, the harm from their use outweighs the benefits and naturalness.

Signs of spoiled cottage cheese

In order for the product to remain fresh for a long time, it is also necessary to maintain a certain air humidity. The optimal rate is considered to be from 30 to 45%.

Cottage cheese has gone bad - how can you tell?

Well, or you made the cottage cheese yourself (there is an excellent recipe here). And here everyone decides for himself - to take risks, hoping to get the maximum benefit, or to heat-treat the cottage cheese: prepare delicious and healthy dumplings, cottage cheese, casseroles, desserts. Cheesecakes with sour cream or jam, even those made without eggs, will please everyone.

Rules for freezing cottage cheese

Place a thin natural fabric in a dry, airtight container. Pour the crumbled product without liquid onto a napkin. Place a second piece of fabric on top. Close the lid tightly. Mark the date of packaging and place on the shelf.

If there is no lid, you can wrap the container with cling film. A product packaged in a large piece will be better crumbled.

Curd products

Curd products are stored longer, since such products have already undergone heat treatment. Store pancakes, pies with cottage cheese filling and other products with cottage cheese in the refrigerator for no longer than 12 hours at a temperature of 4-8°C. At temperatures below +4°C, savings are permissible from 24 to 48 hours. Store such products in tightly sealed containers.

Storage rules

The rules for storing food products established by SanPiN do not allow sellers to repackage perishable products from factory packaging to store packaging. The integrity of the primary packaging must not be compromised and new expiration dates must not be set after that. Such actions are illegal.

If the product is packaged in such a way that it cannot come into direct contact with the hands of workers or with the environment after opening the general packaging, it is allowed to set expiration dates for it in the prescribed manner (for example, for individually packaged cakes that arrived at the warehouse in one large box).

Established food storage standards prohibit the defrosting of frozen foods by stores. Storing food in the refrigerator, according to SanPiN, does not allow the joint storage of semi-finished and raw foods together with those that are already ready for consumption.

Food products are stored at temperature, humidity and light conditions that suit them.

Storage of perishable products, according to SanPiN, is allowed at a temperature of +4 °C (±2 °C). For such products, storage conditions are created under which they retain their nutritional value and are safe for humans throughout the established shelf life. The storage temperature of perishable products is maintained not only in production or in stores. Transport transporting such products must also be equipped with devices that provide the required temperature conditions.

The shelf life of food products is established and secured by sanitary standards and rules SanPiN The requirements of this document are mandatory for legal entities and entrepreneurs producing and selling food products.

How long and how is store-bought cottage cheese stored in the refrigerator?

To answer the question, what is the shelf life of cottage cheese in the refrigerator compartment, it is important to clarify that this indicator depends on the type of container in which the product is contained. Let's consider several options.

Vacuum package

If the original vacuum-type packaging is intact, the fermented milk product can remain usable for up to 30 days. Children's curds, for example, "Frutonyanya", according to manufacturers, retain their properties for up to 14 days.

How long the product can be stored after opening the package must be checked on the label. Thus, curd compositions intended for feeding infants often contain notes stating that after opening the package the product cannot be stored.

Important! When purchasing cottage cheese, inspect the integrity of the packaging and the expiration dates marked on it. This ensures that the product is purchased fresh and can be stored within the permitted time range.

After opening the original packaging, buyers most often transfer the cottage cheese into various bowls and plates. This is the right decision, but it is important to know in which container the product stays fresh longer:

  • in a plastic container with a lid, fermented milk mass can be stored for 3 days;
  • in a closed enamel pan or bowl, the product remains fresh for up to 5 days;
  • In an open plate, the fermented milk mass will begin to dry out after a day.

Experienced housewives give some tips for storing cottage cheese in the refrigerator:

  • The mass must be crumbled into small pieces - this way they will cool more evenly and will not turn sour from the inside.
  • If you place several pieces of sugar at the bottom of the container in which the curd will lie, excess moisture will be absorbed into it. This will increase the freshness of the product by 1-2 days.
  • Dishes with curd paste should be on the shelf with the lowest temperature. The best option is a freshness zone.

Plastic bag

Storing cottage cheese in the bag in which it was purchased is undesirable. Condensation accumulates in plastic packaging, and the lack of air leads to fogging of the product. As a result, the mass acquires a musty smell and changes its thickness to a less uniform one with admixtures of wet pieces.

It is recommended to store the dairy product in a plastic bag for consumption in its pure form for no more than one and a half days. After this period has expired, the mass can only be used for preparing dishes that are subject to heat treatment.

At room temperature, the time at which the curd mass remains suitable for consumption is 6 hours.

You can familiarize yourself with the standards that must be followed in order not to harm your health by consuming cottage cheese from the following documents:

  • GOST 31453-2021 “Cottage cheese. Technical conditions".
  • San PiN 2.3.2 1324-03 “Hygienic requirements for shelf life and storage conditions of food products.”

Clause 8.2 of GOST 31453-2021 stipulates that the manufacturer can independently set the shelf life of cottage cheese and products made from it.

The shelf life of all perishable products is specified in San PiN 2.3.2 1324-03. In the section on dairy products, there is a description of how long a particular milk product can be preserved at air temperatures from -2 to +4 degrees Celsius. Learn more about proper storage and shelf life of milk.

According to GOST, fresh cottage cheese must be odorless, mucus and acidic, white or white-cream, crumbly and uniform in structure and color. It may contain small particles of milk protein.

It is very important to remember what expiration dates are set for the following products:

  • raw cottage cheese and products made from it are suitable for 72 hours;
  • cottage cheese and products after heat treatment – 5 days;
  • shelf life of cottage cheese dishes (pancakes with cottage cheese, dumplings and other products) is 24 hours;
  • cottage cheese casseroles – 48 hours;
  • children's cottage cheese - 36 hours.

Safety of home products

Everything said earlier applies to curd products produced industrially in accordance with GOST. And if you prefer to make homemade cottage cheese by weight?

This delicacy can be stored for no more than 12 hours at a temperature of 15-20 °C. It is advisable to wrap it in clean cotton or linen cloth soaked in cold water, as was done in the old days. You can keep the homemade product in the refrigerator for up to 2 days.

Try to evaluate the quality of cottage cheese before purchasing: a fresh product should have a pleasant sour-milk smell and taste, an even color without spots or inclusions.

The answer to such a pressing request from the product itself is ambiguous. It depends on how quickly after its birth it found itself in the favorable conditions of frosty freshness: the less time passes from the moment it is received to the time it is placed in the cold, the longer it will remain without harm to itself and its consumers.

The place for cottage cheese in the refrigerator is on the top shelf, near the freezer.

Another option for “extending the life” of homemade cottage cheese is to place it in the Fresh Box, where the temperature is kept at 0 to 1 o C with minimal humidity.

We remember that all storage conditions must be observed:

If there is a lot of product and you need to extend its shelf life in the refrigerator, you should look for a place where there is almost permafrost.

Can I keep it in the freezer?

Its shelf life in the refrigerator cannot be compared with its shelf life in the freezer. Temperatures below zero significantly slow down the metabolic rate of the lactobacilli living in cottage cheese, due to which it spoils much more slowly and, therefore, is suitable for consumption for much longer.

Unfortunately, the method also has its drawbacks. Before eating, the curd mass must be properly defrosted - and this process is quite lengthy. If you want to try this dish, it will be impossible to satisfy your desire right away. It can only be defrosted in the refrigerator, which takes ten to twelve hours.

Shelf life of curd products

Cottage cheese and curd products are perishable products. In this regard, this type of food has a limited and rather short shelf life and storage.

The cottage cheese manufacturer can independently determine and set the expiration date and storage standards for its product. He does this based on the composition of the cottage cheese and the type of packaging.

But, nevertheless, there are GOSTs that determine the maximum permissible periods for storage and sale of curd products.

Remember these indicators:

The manufacturer has the right to increase the shelf life and shelf life of cottage cheese products if he uses modern packaging technologies that will keep the product suitable for consumption for a longer time.

However, to do this, he needs to contact the Sanitary and Epidemiological Station and prove there that the product can actually be stored for a longer time than according to GOST. Evidence may include the results of laboratory tests of the product.

Remember that extended expiration dates on perishable foods may be an indication that it contains preservatives or other chemicals.

What should I do if, after opening, a defective product is discovered?

In this case, according to the law, it is possible to return such a product to the store within the expiration period indicated on the packaging.

Important. Once the expiration date has passed, selling the product is strictly prohibited.

What if the product is not replaced?

He is obliged to accept the goods and conduct a quality check. If the seller accuses the buyer that the product has deteriorated due to his fault, an examination is ordered, which is carried out at the expense of the seller in the presence of the client.

If, after the examination, it is established that the product has deteriorated through no fault of the client, the seller must pay the cost of the goods; otherwise, the buyer will reimburse the seller for the costs of conducting the examination.
