Storing cottage cheese in the bag in which it was purchased is undesirable. Condensation accumulates in plastic packaging, and the lack of air leads to fogging of the product. As a result, the mass acquires a musty smell and changes its thickness to a less uniform one with admixtures of wet pieces.

It is recommended to store the dairy product in a plastic bag for consumption in its pure form for no more than one and a half days. After this period has expired, the mass can only be used for preparing dishes that are subject to heat treatment.

At room temperature, the time at which the curd mass remains suitable for consumption is 6 hours.

Clause 8.2 of GOST 31453-2021 stipulates that the manufacturer can independently set the shelf life of cottage cheese and products made from it.

The shelf life of all perishable products is specified in San PiN 2.3.2 1324-03. According to GOST, fresh cottage cheese must be odorless, mucus and acidic, white or white-cream, crumbly and uniform in structure and color. It may contain small particles of milk protein.

It is very important to remember what expiration dates are set for the following products:

  • raw cottage cheese and products made from it are suitable for 72 hours;
  • cottage cheese and products after heat treatment – ​​5 days;
  • shelf life of cottage cheese dishes (pancakes with cottage cheese, dumplings and other products) is 24 hours;
  • cottage cheese casseroles – 48 hours;
  • children's cottage cheese - 36 hours.

Safety of home products

Everything said earlier applies to curd products produced industrially in accordance with GOST. And if you prefer to make homemade cottage cheese by weight?

This delicacy can be stored for no more than 12 hours at a temperature of 15-20 °C. It is advisable to wrap it in clean cotton or linen cloth soaked in cold water, as was done in the old days. You can keep the homemade product in the refrigerator for up to 2 days.

Try to evaluate the quality of cottage cheese before purchasing: a fresh product should have a pleasant sour-milk smell and taste, an even color without spots or inclusions.

It depends on how quickly after its birth it found itself in the favorable conditions of frosty freshness: the less time passes from the moment it is received to the time it is placed in the cold, the longer it will remain without harm to itself and its consumers.

Cottage cheese and curd products are perishable products. In this regard, this type of food has a limited and rather short shelf life and storage.

The cottage cheese manufacturer can independently determine and set the expiration date and storage standards for its product. He does this based on the composition of the cottage cheese and the type of packaging.

But, nevertheless, there are GOSTs that determine the maximum permissible periods for storage and sale of curd products.
