The fact is that this is the only way to preserve them during the month-long (and sometimes 50-60-day) journey from the palm tree branch to the shelf of our local store. And everything would be fine, but unripe bananas are almost impossible to eat - they taste unsweetened, astringent, hard, and tart. Moreover, eating such foods can lead to indigestion.
